Founded by Dundalk-born Pearse Lyons, the Pearse Lyons Distiller y at St. James was born out of a personal passion for brewing and distilling, an entrepreneurial spirit and a deep rooted family connection with The Liberties. Our boutique distillery features two unique copper stills, nestled in the sanctuar y of the restored historic St. James’ Church. These stills produce a range of small-batch craft whiskeys which are aged in superior ex- bourbon casks. The whiskey produced at the Pearse Lyons Distiller y uses our own yeast cultivated in-house and is aged in top-quality barrels sourced from our sister distiller y in Kentucky. Non-chill filtered and bottled at its natural colour, our whiskey is distilled with passion and inspired by tradition.
